Add the sauté and season to taste with salt and optional maple syrup. In a bowl, mix the rice and chopped nuts. Add the garlic, apple, orange and spices and sauté for 5 minutes more. Add the onion and ginger and sauté for 5 minutes until soft. Peel and cut the squash into 1' cubes (see my visual guide on How to Cut Butternut Squash, if needed). Wrap the small square of foil around the garlic, then set it on the baking sheet with the squash. Cover and bake in the oven for 30-40 minutes. ![]() Spoon the mixture into each half of the squash. Bake for 1 2 hours (depending on size) until soft and starting to collapse. You have to turn in right side up in 15 min. Set the oven on high heat at 425 degrees F. Some winter squash varieties smell dirty and almost rotten so don’t be alarmed when you cut into one. The buttercup is relatively easy to cut and de-seed and it smells a bit like a cucumber. Don’t let the bottom of the buttercup and its odd look deter you from giving it a try. It looks as though another squash may be trying to grow out from it. Drizzle the prepared squash with half the olive oil, half the maple syrup, salt and pepper. Cut each half into slices about 1/3' thick and place in a single layer on a large baking sheet. The buttercup squash has a very distinct round bottom that is circular. Cut the squash in half and scoop out the seeds (save them to roast). It’s similar in size and appearance to the kabocha squash. It’s a bit bigger than acorn squash and very much smaller than a Hubbard squash. Using a very sharp chefs knife, cut off the top stem and about 1/4th-inch from the bottom.
